1 1/2 cups Carbonaut baking mix
1 tsp Cornstarch
1/2 tsp Baking powder
1/8 tsp Baking soda
3/4 tsp Salt
1 Large egg, or plant-based substitute
3/4 tbsp Vanilla
1 tbsp Sugar-free maple syrup
1/2 cup Unsalted butter, or plant-based substitute, cold and cut into cubes
3/4 cup Sugar replacer of your choice
3/4 cup Keto friendly Chocolate chips

INSTRUCTIONS:

  1. Pre-heat your oven to 375°F.
  2. Whisk together dry ingredients in a large bowl: Carbonaut baking mix, cornstarch, baking powder, baking soda, and salt.
  3. With a mixer, cream cold butter until fluffy, about 1-2 minutes.
  4. Add in sugar replacer and beat for an additional 2 minutes.
  5. Pour in egg mixture and mix until just combined.
  6. Add flour mixture 1/3 at a time until well combined, scraping down the sides as needed.
  7. Mix in chocolate chips until combined throughout dough.
  8. Scoop dough to form 15 cookie balls and add to a parchment lined baking tray.
  9. Bake for 13-15 minutes until you see the bottom edges turning brown. Allow to cool for 5 minutes before transferring to a cooling rack.
