1 pack Carbonaut baking mix
2 tbsp Confectionary/powdered sugar replacer of your choice
1 tbsp Baking powder
1/4 tsp Salt
3/4 cup Butter, or plant-based alternative, cold and cubed
1/2 cup Chives, finely chopped
1 1/2 cups Cheddar cheese or plant-based alternative, shredded
1/2 cup Buttermilk or plant-based alternative, cold
1 Large egg or plant-based alternative, cold

  1. Preheat oven to 400F. Line 2 baking sheets with parchment paper. Arrange oven racks to the middle of the oven.
  2. Whisk Carbonaut baking mix, sugar replacer, baking powder, and salt together in large bowl.
  3. Cut the cold cubed butter into the dry mixture using a pastry cutter or fork until the pieces of butter are pea sized. Fold in the chopped chives and shredded cheese.
  4. In another bowl, whisk together buttermilk and egg. Add to the baking mix/butter mixture and gently fold with a spatula until the dough just starts to come together.
  5. Knead the mixture until the dough is just combined.
  6. Divide dough equally into 3 and shape into 1-inch-tall disks. Quarter each disk into 4 pieces. Arrange 6 pieces per pan.
  7. Bake for 11-15 minutes, rotating sheets halfway through bake time, or until lightly golden. Let cool slightly, best served warm.
