Triple Chocolate Energy Bites

INGREDIENTS:

2 cups Carbonaut Double Crunch Granola
2 cups Almond flour
1/4 cup Chia seeds
3 tbsp Unsweetened cocoa powder
1/2 cup Unsweetened nut butter
1/2 cup Unsweetened almond milk
1/3 cup Sugar-free maple syrup
1 tbsp Vanilla extract

Low carb and gluten free, you can munch on these and feel no guilt. Both high in fiber and protein, Triple Chocolate Energy Bites may be your new answer to the mid-afternoon slump.

INSTRUCTIONS:

  1. Pre-heat your oven to 350°F.
  2. Process granola in food processor then place in large mixing bowl.
  3. Add flour, chia seeds, and cocoa, then combine well.
  4. Mix nut butter, almond milk, maple syrup and vanilla.
  5. Add wet ingredients to dry and mix with fork until well combined.
  6. Grease mini-cupcake tray with coconut oil.
  7. Drop a large spoonful of batter into greased tray cups and press down lightly with fingers.
  8. Bake for 10 minutes.
  9. Remove from oven and let cool for 5 minutes before removing from pan and placing on cooling rack.

    TIPS:
    • If you don’t have a mini muffin pan, try dropping spoonfuls directly onto lightly greased cookie sheet.
    • If you don’t want to grease the cookie sheet, you can use parchment paper.
    • Use whatever unsweetened nut butter you have on hand.
    • Any plant-based milk alternative would work. Try cashew!
