U.F.Oat Stacked Sandwich

2 slices Carbonaut U.F.Oat bread
1 tbsp Chipotle vegenaise
1/2 Avocado
4 Cucumber slices
1/4 cup Purple cabbage, shredded
1 slice Tomato
2 Romaine lettuce leaves
1 lg Pitted green olive, in toothpick

  1. Toast bread slightly (do not over toast)
  2. Mash avocado on one slice of bread and spread the Vegenaise on the other slice
  3. Layer rest of ingredients over the avocado, except olive
  4. Close the sandwich and secure with olive-pierced toothpick
